Date and Walnut Fudge Balls

Makes 20-25

1 cup walnuts *
½ cup goji berries or cranberries or other dried berries *
½ cup dried figs or raisins *
¼ cup sesame seeds *
½ cup desiccated coconut *
10 Medjool dates, destoned * 
Extra coconut, sesame seeds or chia seeds for rolling *

1.    Put all ingredients in the food processor and process until firm but sticky, this will take about 5 minutes.
2.    Add extra dates if the mixture is too dry or more walnuts if too sticky.
3.    Roll tablespoons of mixture into balls, then roll in coconut, sesame or chia seeds.
4.    Best refrigerated for a short while before eaten.
